What you need:
1 package (300g) tofu
1 tablespoon unsweetened soy milk
1 bunch basil leaves, stems removed
1/2 cup frozen spinach (I couldn't find decent fresh spinach this season, so I used frozen)
1 clove garlic
1 tablespoon olive oil
3 tablespoons golden whole wheat breadcrumbs for filling
+ 1/2 cup golden breadcrumbs for coating

Process the tofu in a food processor with the basil leaves, spinach, garlic, soy milk, and olive oil until a uniform mixture is obtained.

If your food processor struggles to blend all ingredients together, add one or two more tablespoons of soy milk.
