Vegan Apple Cinnamon Muffins – Only 60 Calories

In case you didn't notice, I only published one recipe this week.
I usually post two, but I simply ran out of time this week.
If you're wondering why, it's because I was working hard on this specific vegan apple muffin recipe.
I made this recipe 6 times, each time with a slightly different version.
Once it was too soft, another time it had too many calories, but finally, I managed to create an apple muffin that is delicious, indulgent, and sweet, while still being low in calories.
To be honest, these aren't exactly muffins but more like mounds of baked apples held together by a bit of sweet dough.
But the result, in my opinion, is indulgent and delicious, with a pleasant taste of autumn and tart apples.

A bit about the recipe
To sweeten the muffins, I used coconut sugar simply because it has a deep, slightly nutty flavor that I think pairs perfectly with cinnamon.
- Coconut sugar doesn't actually have a lower glycemic index than regular sugar and isn't "healthier" than white sugar. I use it for baking purely for the taste. There is no nutritional or health reason to prefer it over other sugar products.
You can also use demerara sugar, white sugar, or even no sugar at all – it will still come out tasty.
For the dough base, I used whole wheat flour, but you can absolutely use spelt flour, chickpea flour, or any flour you like.
I used soy milk, which is essential for the recipe due to its high protein content.
I used a kilo of Golden Delicious apples (love that name!), but you can also use pears, pineapple, or any other firm fruit you fancy.
You can add nuts and almonds to the recipe, but the caloric value will increase significantly.

How to eat them?
One muffin can be a perfect energy snack before endurance or strength training due to the high amount of carbohydrates and low fat content.
Two muffins can also be a wonderful late-night snack or even an addition to breakfast.

Vegan Apple Muffins
Ingredients
- kg Apples - Golden Delicious Approx. 8 apples
- 3 tbsp Coconut sugar
- 100 g Whole spelt flour 3-4 tbsp
- 3 tbsp Unsweetened applesauce 75g
- 1 tbsp Raisins
- 1 tsp Oil
- 2 tbsp Ground cinnamon
- Juice of half a lemon
- 1/2 cup Soy milk Light
- 1 tsp Baking soda
- 1 tsp Baking powder
- Pinch of salt
- 1 tsp Vanilla extract
Instructions

Peel the apples, core them, and cut into cubes.

Preheat oven to 180°C.

Transfer to a deep bowl and add the raisins.

Add one tablespoon of sugar and one tablespoon of cinnamon and mix well until all apples and raisins are coated.

In a separate bowl, mix the soy milk with the lemon juice until slight protein curds form and the texture changes slightly (about 1-2 minutes).

Add the vanilla extract, oil, applesauce, remaining cinnamon, and another tablespoon of coconut sugar to the bowl and mix well.

Add the flour, baking soda, baking powder, and salt, and mix until a smooth batter forms.

Pour the batter over the apples and mix well until all apples are thoroughly coated.

Using a spoon, distribute the mixture into 20 muffin liners.

Sprinkle a little coconut sugar over each muffin (using the last remaining tablespoon of sugar).

Bake for 15-18 minutes until browned.

Remove and let cool for at least 20 minutes before enjoying.
