3-Ingredient Vegan Matzah Cake

It's so great that spring is finally here, and the entire feed is full of Passover recipes.

Amir's mother used to make this vegan matzah cake every year for the Seder night.

It's an uncomplicated, simple recipe—you can make it with the kids or whenever you need to whip up a Kosher-for-Passover vegan dessert when guests are already at the door,

because it only takes about two hours for the cake to set in the fridge. That’s it (even less).

Even though this cake is ridiculously simple, its flavor is addictive—combining the crunchiness of the matzah with the rich creaminess of the chocolate.

I don't have good news in terms of calories, fat percentage, or sugar, as this cake is rich in everything I just mentioned. (We're allowed to treat ourselves during the holiday, right?)

But you can take comfort in the fact that everyone will rave about it, and you won't have a single crumb left.

That's also something, isn't it?

As simple as it is delicious

A bit about the recipe:

I used simple dark chocolate; you can swap it for any chocolate you like, such as the white chocolate from this recipe, or "milk" chocolate.

I used hulled white tahini rather than whole-seed tahini because the latter can have a stronger flavor that might overpower the chocolate.

If you don't want to use tahini, you can replace the same amount with almond butter or smooth peanut butter. The taste and texture will be more or less the same.

And instead of matzahs, you can, of course, substitute with vegan wine cookies, another type of cookie you like, or even omit them entirely to get stunning chocolate truffles.

I used a glass Pyrex dish, but you can also use a springform pan or small muffin tins for individual desserts.

Just throwing an idea out there 🙂

Vegan Matzah Cake

Nutritional values by clinical dietitian and fitness coach Noam Bachar:

One piece of cake weighing 45g contains:

240 kcal

5g protein

21g carbohydrates

15g fat

A little tip:

If you want to enjoy the cake while staying within a reasonable caloric frame, cut it into 40 slices.

This way, you'll get a small slice at only 140 calories.

Trust me, since the cake is very dense and rich, even a small piece will satisfy your holiday sweet tooth.
