A recipe for a homemade, inexpensive, and delicious protein bar, with 15 grams of protein per bar, no mixer or oven required.
Ingredients
- 1 cup natural peanut butter (250g), liquid and smooth
- 1/2 cup natural date syrup
- 3 tablespoons apple sauce (about 50g)
- 3.5 scoops vegan vanilla protein powder (about 105g)
- 2 cups puffed rice cereal (unsweetened)
- Optional: pinch of coarse salt, half a teaspoon of cinnamon
Instructions
- In a large bowl, mix the date syrup, apple sauce, salt, and cinnamon (if using).
- Add the peanut butter and mix well until a smooth and shiny cream forms.
- Add the protein powder and mix to a soft, play-dough-like consistency.
- Pour in the puffed rice cereal and knead with your hands until all the cereal is coated in the dough.
- Press firmly into a small square pan lined with parchment paper.
- Freeze for two hours to set.
- Remove, cut into 10 rectangles, and drizzle with a little peanut butter mixed with date syrup.
Tips
If the mixture feels dry and crumbly, you can add one tablespoon of water. To store, keep the bars in a sealed container in the freezer.
