An easy and quick recipe for crunchy peanut butter bites at only 40 calories, vegan and no-bake.
Ingredients
- 2 cups unsweetened puffed rice cereal
- 2 tablespoons natural peanut butter, no added sugar
- 3 tablespoons zero-calorie maple syrup
- 1 tablespoon quality cocoa powder
- Pinch of Atlantic salt
- For drizzling: a little peanut butter mixed with a drop of oil
Instructions
- In a microwave-safe bowl (or a small pot), heat the peanut butter and maple syrup until liquid and smooth.
- Add the cocoa powder and salt and mix well until a rich chocolate cream is obtained.
- Gently fold in the puffed rice cereal until fully coated.
- With wet hands, form 8 small balls, place on parchment paper, and flatten into disc shapes.
- In a small bowl, mix a little peanut butter with a drop of oil and drizzle thin lines over each disc.
- Freeze for 45 minutes to set completely.
Tips
Thaw for a few minutes on the counter before eating. Store in the freezer and take out whenever you crave them.
