A vegan, gluten-free, and protein-rich tortilla made from red lentils and spinach. A quick and simple recipe with only 3 main ingredients.
Ingredients
- 1 cup red lentils (after soaking for at least two hours, drained and rinsed)
- 1 handful fresh spinach leaves
- 1 tbsp psyllium husk
- 3/4 cup water
- A pinch of salt
Instructions
- Place all ingredients into a blender and blend until a smooth batter is formed.
- Let the batter rest for 10 minutes to stabilize.
- Heat a panini press or a non-stick skillet.
- Pour about 2 tablespoons of the batter for each tortilla and cook until it is flexible and firm.
Tips
It is recommended to fill the tortilla with tahini, avocado, or stir-fried tofu. It is strong and holds any filling without falling apart.
