A quick recipe for vegan, high-protein tahini bread made in the microwave in minutes. This bread uses silken tofu for a moist and airy texture, gluten-free and egg-free.
Ingredients
- 2 tablespoons tahini (preferably whole sesame)
- 3 tablespoons silken tofu (soft/silken texture)
- 2 heaping tablespoons red lentil flour (or other legume flour)
- 1/2 teaspoon psyllium husk
- 1/2 teaspoon baking powder
- Pinch of salt
- Optional: 1-2 tablespoons water (only if the batter is very stiff)
Instructions
- In a small bowl, mix the tahini and tofu until smooth.
- Add the dry ingredients and mix well.
- Let the batter rest for a minute for the psyllium to absorb the liquids.
- Microwave for 90 seconds, until the top is dry.
- Remove from the dish, wait 2 minutes to set, and slice.
Tips
After slicing, it is recommended to put the slices in a toaster or on a pan for a minute to get a crispy crust.
