A quick and easy recipe for tofu pitas rich in protein, low in carbohydrates and calories. The pitas are crispy on the outside and soft on the inside, and ready in a toaster in 10 minutes.

Ingredients
- 1 block firm tofu (300g), well pressed
- 2 heaped tablespoons psyllium husk
- Salt, garlic powder, and a pinch of turmeric
- For topping: olive oil and za'atar
Instructions
- Blend all dough ingredients in a blender until a uniform mass is formed (like playdough).
- Let the dough rest for 10 minutes.
- Form 8 small pitas and flatten them.
- Brush with olive oil and za'atar, and place in a sandwich toaster (without baking paper).
- Press for 10 minutes until the pitas are firm and golden brown.
