A recipe for vegan red bean patties with a meaty texture, which hold up perfectly when cooked in sauce thanks to a special preparation method.
Ingredients
- For the patty base:
- 1 can red beans (drained and rinsed)
- 1/2 cup walnuts
- 2 tablespoons instant oats
- 1 tablespoon psyllium husk
- 1 tablespoon olive oil
- For seasoning and color:
- 1 tablespoon soy sauce
- 1 teaspoon tomato paste
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- For the sauce:
- A jar of quality tomato sauce
Instructions
- Rinse the beans and dry them well on paper towels.
- In a food processor, finely chop the walnuts into coarse crumbs.
- Add most of the beans (reserve a handful), oats, psyllium, and spices, and process into a sticky mixture.
- Add the reserved handful of beans and pulse 2 times briefly to create texture.
- Transfer to a bowl and let the mixture rest for 30 minutes to firm up.
- Form the mixture into ping-pong sized balls.
- Sear in a hot pan for about a minute on each side until browned.
- Transfer the seared patties to a pot with bubbling tomato sauce, reduce heat and cook for 15 minutes uncovered.
Tips
The secret to a stable patty is good drying of the beans and letting the mixture rest for 30 minutes. It is recommended to serve with quinoa or brown rice.
