A delicious vegan recipe for Sloppy Joe made from shredded yuba in a rich and seasoned tomato sauce, perfect for serving in a soft bun.
Ingredients
- 1 whole package of yuba in the form of wings or any other shape
- 1 large onion, chopped
- Olive oil
- 1 teaspoon sweet paprika
- 1 tablespoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon curry powder
- 2 cloves garlic, crushed
- Salt (to taste)
- 1 teaspoon cocoa powder (optional)
- 2 tablespoons soy sauce
- 1 teaspoon sugar
- 1 can crushed tomatoes
- 1 heaped tablespoon tomato paste
- 1.5-2 cups water
- Bay leaves
Instructions
- Prepare the Yuba: Grind the yuba in a blender in pulses until crumbs of various sizes are formed.
- Sauté the Base: In a large pot, sauté the onion in olive oil until golden. Add all the spices: sweet paprika, smoked paprika, cumin, curry powder, garlic, salt, cocoa powder, soy sauce, and sugar. Sauté while stirring for about a minute.
- Cook the Sauce: Add the crushed tomatoes, tomato paste, and the amount of water (between 1.5 to 2 cups). Bring to a boil.
- Finish: Add the bay leaves and the yuba crumbs. Cook for another 15 minutes over low heat, until the yuba softens and the dish thickens.
