One of the highest quality sources of plant-based protein is undoubtedly lentils.
Since the dawn of history, humans have learned to cook and eat these wonderful legumes, which are rich in protein, carbohydrates, fiber, and vitamins.
Beyond numerous mentions in the Bible, you can find historical evidence across many cultures that lived, thrived, and ate around the Mediterranean, Asia, and Africa.
And it's easy to see why: besides their wonderful nutritional value, they are cheap, easy to prepare, and provide a rich flavor to any dish.
I imagine this post might be slightly less "popular" on my Instagram and Facebook – after all, how can a soup compete with photos of donuts, latkes, and other crazy desserts?
But despite everything, it's important to me to answer the question: how do you make lentil soup?
You might be surprised to learn that lentil soup is perhaps one of the easiest recipes to prepare:
There's no need to soak the lentils before cooking, no need for expensive ingredients found only in health food stores, and it doesn't take long to cook.
It's almost as simple as throwing the vegetables and lentils into a pot and that's it.

I used green lentils in this recipe, and as I mentioned, there's no need to soak them at all.
You can also use black, orange, or Puy lentils in this recipe, which also don't require soaking.
You can even use sprouted lentils, which contain less phytic acid due to the sprouting process (which may help with iron absorption)—it will turn out just as tasty.
I used aromatic vegetables to flavor the soup. If you don't like one of the vegetables, simply swap it for another one you enjoy.
How to serve it?
A serving of soup accompanied by a slice of bread or two can be an excellent solution for a nutritious and complete lunch or dinner that provides the body with all essential nutrients.
It's a perfect dish for anyone looking to build muscle mass in the gym or, alternatively, to lean down for summer and let those abs show.

How to Make Lentil Soup
Ingredients
- 3 tbsp olive oil
- 2 carrots peeled and diced
- 3 cloves sliced garlic
- 2 celery stalks + leaves sliced
- 400 g green lentils approx. 2.3 cups
- 1 tsp turmeric
- 1 tsp cumin
- salt and pepper
- 3 liters water
Instructions

In a large pot, sauté the celery, carrot, onion, garlic, and a pinch of salt for about 2-3 minutes while stirring.

Add the lentils and stir.

Add the cumin and turmeric and sauté for another 2-3 minutes.

Add water and bring to a boil.

Lower the heat and simmer on low for about 40 minutes.

Check the soup occasionally; if it becomes too thick, add 2 cups of water and continue cooking.

That's it, the soup is ready. It will taste even better tomorrow. Just saying.
