With only 5 ingredients, you get great cookies—chocolaty, soft, melt-in-your-mouth, and very delicious.

These are cookies you can make in advance and keep in an airtight container for whenever you want a tasty snack with extra protein, and the fact that they're vegan makes it even better.

I'll start by saying the base of the recipe is Unflavoured Soy Protein Isolate from Myprotein, which is definitely my favorite powder from their wide range of offerings.

A bit about the recipe

 

To create a pleasant fluffiness for the cookie so it doesn't come out too dense, I whip aquafaba, which is the canned chickpea water (I won't elaborate on it, as I'm sure you've encountered it a million times).

Please note that aquafaba (a beautiful name for chickpea water) only whips well with sugar. Without any sugar, you won't get a foam at all. You can reduce the sugar to a minimum, but don't skip it entirely.

I used high-quality dark chocolate. I have a feeling you could swap the chocolate for the same amount of peanut butter. I admit I haven't tried it, but there's no reason it shouldn't work.

If you want a lower-protein and much softer version, replace the protein powder with double the amount of white wheat flour. Careful, it can be addictive 🙂

Ingredients

  • 1/3 cup aquafaba 80 ml
  • 1 tbsp sugar 15g
  • 100 g dark chocolate chips
  • 20 g chocolate chips for decoration
  • 1 tsp baking soda
  • 50 g Myprotein Unflavoured Vegan Protein Powder or any other brand you prefer

Instructions

  1. Preheat oven to 180°C

  2. Pour the aquafaba into the mixer bowl and add the sugar

  3. Turn the mixer to the highest speed and whip for 3-4 minutes until a uniform and stable foam forms, then transfer to a deep bowl

  4. Melt the chocolate in the microwave in 30-second pulses until melted, or over a double boiler.

  5. If the chocolate is very thick and not liquid, you can add a tablespoon of vegetable oil to thin it slightly

  6. Add one tablespoon of melted chocolate into the foam bowl and gently fold it in using a spatula. (Folding means very, very gentle mixing)

  7. Repeat the process until a light and uniform chocolate mousse is formed

  8. Add the protein powder and baking soda and mix until a uniform and sticky dough forms

  9. Line a baking tray with parchment paper

  10. Using wet hands, form 8 balls and place them on the baking tray

  11. Flatten them slightly and decorate with a few chocolate chips

  12. Bake for about 8 minutes (if you want crispier cookies, leave them for an extra minute or two)

  13. Remove and cool completely before serving
