This week, I was invited by Vibe Israel to a farewell cocktail event for a delegation of vegan bloggers from abroad.

As a result, my family asked for a quick vegan dessert for the Seder—low in calories and fat, and if possible, something that wouldn't destroy the kitchen again.

Tofu and Rice Cakes as Dessert – I Haven't Gone Crazy

Yes, this is a quick vegan dessert that contains rice cakes, which give it volume.

Tofu instead of cream gives the mousse a wonderful, indulgent texture along with great nutritional values: protein, calcium, and very little fat.

And the best part? It took me exactly 5 minutes to make (and 3 minutes to devour).

It has an indulgent espresso chocolate flavor where you can't taste the tofu at all, and the white chocolate provides an extra sweet finish.

I don't know about you, but I plan on making this dessert all year round, not just for Passover.

Ingredients

  • 300 g silken tofu or firm tofu cut into cubes
  • 100 g dark chocolate
  • 4 rice cakes unsalted
  • 1 tbsp cocoa powder
  • 50 g vegan white chocolate optional
  • 1 cup long espresso If children are eating the dessert, replace the espresso with half a cup of soy milk

Instructions

  1. Melt the chocolate in the microwave or over a double boiler.
  2. Transfer the tofu, melted chocolate, espresso, and cocoa powder to a food processor and blend thoroughly.

  3. Transfer to a bowl and chill in the refrigerator for at least 3 hours.
  4. Before serving, crumble the rice cakes into the chocolate mousse and mix well.
  5. Divide into 6 cups.
  6. Melt the white chocolate in the microwave.

  8. Serve and enjoy.
