Tofu Patties in Green Sauce and an Important Tip for Iron Absorption
Last week, during one of the cooking workshops I held in my toning challenge, a participant asked me how to increase iron absorption in the meals we eat.
First of all, I was very happy about the question because although my workshop is called the "Toning Challenge" and is designed for people who want to make a physical change like toning or building muscle mass, it's important to me to also talk about minerals and absorption efficiency in these workshops.
So, you might want to write down this little tip: Iron is absorbed much better in the presence of Vitamin C.
What does that mean?
Combining food rich in Vitamin C, such as lemon juice, tomatoes, bell peppers, etc., with food rich in iron like spinach, parsley, and more, will help with iron absorption.
