Low-Calorie Apple Strudel - Only 90 Calories Per Slice

Strudel is a classic Central European dessert, traditionally filled with apples cooked in heaps of butter and layers upon layers of phyllo dough baked with (how else?) even more butter.
Unlike many other classic sweets, the balanced and vegan version is actually quite easy to make yourself.
The result is a delicious dessert with a reasonable calorie count, leaving you enough room for a scoop of vanilla ice cream without the guilt.
Because hey, all that's in here are apples cooked with a bit of coconut sugar and coconut oil, and a total of just 3 sheets of phyllo!
Now, if you're the "I must have a decadent and massive chocolate dessert" type, this recipe might not be for you.
But if you're in the mood for something sweet and indulgent that won't blow your calorie budget, this is exactly what you need.

A bit about the low-calorie apple strudel
- This recipe is based on Granny Smith apples, which are tart and hold up well in desserts. You can use any other apple you have on hand. By the way, this recipe works beautifully with pears too. (I'm not sure about other fruits; that would need testing.)
- I sweetened it with coconut sugar, which gives a deep, slightly nutty flavor, but it is also quite pricey. You definitely don't have to use it. Any sweetener you prefer will work. For the brave, you can even omit the sugar entirely—just keep in mind it won't be very sweet.
- I sautéed the apple slices in a little coconut oil and also used it to brush the dough. If you're not a fan of the taste of coconut oil, don't worry. You really won't taste it in the final product. And if you want to swap it for another oil, go for it!
- I used phyllo dough, which is a personal favorite because it contains no fat at all (and definitely no margarine!)—just flour and a bit of salt. Don't confuse it with puff pastry. The entire recipe uses only 3 (!) sheets of phyllo, which is very little (!) dough.

One slice out of 10 weighing 90g contains:
- 90 kcal
- 1g protein
- 20g carbohydrates
- 1g fat
Adding a scoop of plant-based vanilla ice cream — adds approximately 100 kcal.

Low-Calorie Apple Strudel
Ingredients
- 3 sheets of phyllo 105g
- 4-5 Granny Smith apples 740g
- 2 tbsp coconut sugar 30g
- 2 tbsp coconut oil 20 ml
- 1 tsp powdered sugar
Instructions

Thaw the phyllo sheets in the refrigerator according to the manufacturer's instructions.

Preheat the oven to medium heat at about 180 degrees.

Peel the apples, slice them, and remove the seeds.

In a skillet, heat one tablespoon of coconut oil and add the apples.

Stir well until all the oil coats the apples thoroughly.

Add the sugar and stir well.

Add a teaspoon of vanilla extract.

Cook the apples for about 8-10 minutes until they are caramelized and softened.

Remove from heat and let cool slightly.

Lay a pair of phyllo sheets together on a work surface.

Place an additional phyllo sheet on the bottom half of the pair, creating a 50% overlap (see video).

Place the apple filling in the center of the phyllo sheets.

Fold the phyllo sheets inward from the sides first, then the part closest to you.

Roll the phyllo sheets into a log (see video).

Brush with a little coconut oil.

Bake for about 20 minutes until golden brown.

Remove from the oven and let it cool.

Before serving, slice into 10 pieces and sprinkle a little powdered sugar over the top.
