Easy chickpea patties with just 76 calories each! Perfect for lunch or a post-workout meal.
Ever stared at the canned chickpeas at the grocery store and thought, “Okay, but what am I actually going to do with those?”
Chickpeas are a wonderful source of protein and B vitamins, including folate. They’re low in fat and rich in fiber, which helps keep you feeling full longer. And sure, I love scooping up hummus at a hummus spot or tossing these little golden gems into dishes like couscous. But chickpeas can also be the main event, not just a supporting player at the dinner table.
These patties happened almost by accident. I wanted to make something tasty with a can of chickpeas that had been sitting in my pantry for a few weeks. My first thought was falafel—the ultimate chickpea patty—but I wanted something a little more elegant. Something I could serve at a special dinner.
These patties have a lovely, delicate lemon flavor and a soft, tender texture. Tuck them into a pita with salads and tahini, and you’ve got yourself a pretty perfect bite.
Before opening the can, I checked that the label said it was free of bisphenol A (BPA), a potentially harmful chemical that can leach from some can linings.
Noam Bachar (an Israeli nutrition consultant and fitness instructor) provided the nutrition breakdown:
Each patty contains: 76 calories, 9.5 g carbohydrates, 3.5 g protein, 1.5 g fiber, 23 mg calcium, and 1 mg iron.
