Quick Vegan Coconut and Chocolate Balls for Passover

I believe the world is divided into two.

Those who can't stand coconut and those who are addicted to it.

I belong to the second group.

I love everything related to this wonderful nut.

Curry dishes with coconut milk excite me.

Fruit smoothies with coconut milk transport me to Thailand.

And desserts that combine coconut truly awaken my senses and salivary glands. Like, for example, coconut and chocolate balls.

Maybe that's why Passover is a wonderful excuse for me to snack on the wide variety of Kosher-for-Passover cookies available.

I must confess, I really love all the Passover-certified cookies.

(Wait, I haven't even started talking about peanut cookies or wine cookies yet!)

Today, you can find a huge variety of coconut products such as: coconut flour, coconut milk, coconut drink, coconut sugar, and more.

They have many health benefits, but also some notable drawbacks—primarily the saturated fat found in the coconut.

Those sensitive to gluten will be happy to hear that coconut flour and other coconut-derived products are completely gluten-free because they do not contain the allergenic protein found in wheat.

Coconut and chocolate balls

A bit about the recipe:

For the base of the cookies, I used coconut flour which I found in the organic section of the supermarket. You can also use shredded coconut, but the result will be slightly different.

To bind the flour (which requires no baking or cooking at all), I used high-fat coconut cream (20%). A lower-fat coconut cream might not harden completely, but I think it's worth a try.

I coated the balls in dark chocolate for a treat in every bite. If you want to skip it, that's also an option, but in my opinion, it's less tasty.
