Vegan Granola for Breakfast—or Whenever You Want a Healthy Snack
If you landed here, I'm guessing you're a breakfast person. Or maybe a late-night snack person. No judgment.
I've officially reached the age when 6 a.m. feels magical. I love the quiet neighborhood, the cool morning air, and the way the day slowly makes its way into the house.
My favorite thing to eat at that hour? A bowl of homemade vegan granola.
This granola is chunky and sticky, perfect for a deep bowl filled with soy milk and all kinds of delicious extras.
It's sweet, satisfying, and nourishing, with a generous helping of fiber, complex carbohydrates, and protein to help keep you full and fueled for the day ahead.

A Little About This Vegan Granola
The base is oats, bananas, and tahini, mixed into a sweet, oatmeal-like mixture. Bake it, crumble it into a deep bowl, pour in plenty of soy milk—or whatever plant milk you like—and dig in.
And I already know what you're going to ask: No, you don't have to add protein powder.
I like using it because it gives my daily protein intake a substantial boost.
Don't have any? Not a fan? Skip it. Your granola will still be delicious and satisfying.
