The Story Behind the Recipe

These easy vegan oat rolls are made without wheat flour, and they're just the thing to nibble with your morning coffee.

Easy Vegan Oat Rolls

What's your go-to breakfast? I love a bowl of oatmeal with soy milk, some fruit, and a small handful of nuts. Then I'm out the door, full and ready for the day.

I know, I know. On a blazing-hot summer morning, a steaming bowl of oatmeal doesn't always sound appealing. That's where these oat rolls come in: an easy breakfast option you can make a few days ahead.

Pair a roll with a good spread, like unsweetened peanut butter or whole-seed tahini, and some vegetables, and you've got yourself a nice little breakfast.

A little heads-up ♥! These rolls are filling, but they also pack quite a few calories for their size – 160 calories per roll! That's the equivalent of 2 slices of bread, or 2 carbohydrate servings.

And they're very tasty, so try not to let the whole batch disappear in one sitting :) 🙂 🙂

Ingredients

Makes 8-10 rolls, about the size of a ping-pong ball

  • 2 cups oat flour – made by grinding oats very finely in a spice grinder
  • 1 cup unsweetened soy milk
  • 1 tablespoon dry yeast
  • 2 tablespoons olive oil
  • 1 teaspoon silan (date syrup)
  • Coarse salt

Directions

  1. In a deep bowl, mix the oat flour with the 1 cup soy milk, 1 tablespoon yeast, olive oil, and silan until you have a sticky dough that holds together, with no lumps.
  2. Cover with a kitchen towel and let rise in a warm spot for about 1 hour, or refrigerate overnight.

♥ Oat dough doesn't rise easily, so you may not see much change in volume. You should, however, see bubbles in the dough itself.

  3. After the dough has risen, preheat the oven to 200°C (400°F). With wet or lightly oiled hands, pinch off pieces of dough and roll them into balls about the size of a ping-pong ball.
  4. Top each roll with a little coarse salt and a few oats, then drizzle with olive oil.
  5. Bake for about 8 minutes at this high temperature, then lower the heat to 150°C (300°F) – and bake for another 12-15 minutes, until cracks form on the rolls.
  6. Let cool and serve.
